New Joe's Special
(as served at Original Joe's, San Jose, CA)

Here's an old recipe from Don Rayner's Cookbook. This is a great quick meal.

1 T olive oil
2 to 3 cloves garlic, chopped
1 lb. ground beef
1 pkg frozen spinach
4 eggs

 Directions:
In a frying pan, brown garlic in oil. Add beef and brown over medium high heat, breaking beef into small bits. Push beef to sides of pan and put frozen block of spinach into the space in center of pan.  Cover and steam for about 3 mins.  Turn over spinach and steam for 3 more mins.  Keep turning beef as spinach is cooking. In a bowl, beat eggs with a fork until well mixed. When spinach is done, mix with beef. Add eggs, salt and pepper to taste.  Let eggs set soft before stirring mixture.  Stir & turn, then serve at once.  Great with sliced tomatoes & french bread or garlic bread -- even better!
